Easy Avocado Recipe Even Kids Will Like!

Even though avocado was the first real food Ezra ever ate and I had every intention of him LOVING avocados and craving them all the time, that didn’t exactly happen. Though he does love fruits and vegetables, he’s definitely not a fan of raw, plain avocado so I’ve had to find ways to add them into meals so we can all get the incredible benefits of avocados. They are packed with tons of vitamins and minerals, healthy fats, potassium, antioxidants, and have been shown overall to contribute positively to your health.

Plus they’re incredibly versatile and can go on so many things. You can make homemade guacamole, eat them sliced on toast, add them to salads, smoothies, sandwiches or burgers, and add them into lots of dishes! Our absolute favorite way to incorporate avocados right now is this bean and corn dip that is SO easy to make and so good that we all three crave it when we haven’t had it in a while. It’s the perfect way for Ezra to get tons of delicious ingredients into his diet, and it takes me about 10 minutes to throw together. You definitely have to try it!

Bean, Corn and Avocado Dip

1 Avocado

1 15 oz can organic corn

1 15 oz can black beans

4 Tbsp salsa

2 Tbsp diced onion

1/4 tsp salt

1/4 tsp pepper

2 drops Lime Vitality essential oil (optional)

Serve with Organic tortillas or tortilla chips

Scoop out the avocado and mash it. Add the salsa, onion, salt and pepper and lime and stir. Drain the beans and corn and stir into the avocado mixture. Voila, easy as that!

Seriously, one of the easiest meals ever, and this makes enough to feed the three of us when we eat it with our favorite organic blue chips. It’s cool and refreshing in the summer but so filling and nutritious. When we first started making it I didn’t think to add the lime, but once I decided to try it I was hooked. I know that some people aren’t comfortable with ingesting essential oils, but it is so diluted and subtle in this dish so I feel pretty good about it. Plus we always use Young Living Vitality oils, so we know that they are pure and high quality. Read more about why I love these oils in this blog post. I’m just obsessed. With oils in general, and with the lime in this dish. It adds the extra flavor that just really makes it pop.

So there you go, a super healthy, crazy easy meal that can hopefully get you (and your kids!) eating and loving delicious avocado. We definitely couldn’t live without this amazing fruit in our family!
